This is a fun way to make some cocoa. It’s white chocolate cream, cocoa pearls with vanilla foam. Not very efficient and pretty time consuming but they are delicious.
The white chocolate cream is simple, just white chocolate and cream. The cocoa pearls were made using sodium alginate and calcium lactate. The vanilla foam was a simple water and vanilla extract with some soy lecithin.
I don’t have the right spoons to serve this up but it still turned out alright in my brie melting dish!
